    Drunken Noodle Sauce

    Drunken noodles, or pad kee mao, is a perfect weeknight meal. I find myself making it all the time as an alternative to the classic "cleaning out the fridge" stir-fry, because it's a perfect way to make use of odds and ends to make a delicious meal!

    So it occurred to me, with all sorts of ingredients able to go into the dish itself, is it the sauce that's so good? As it turns out, yes it is. Pad kee mao sauce is the perfect blend of savory, salty, and spicy just to your taste!

    Plus, it's so easy. With only six ingredients and barely any steps to make, it's the perfect Thai sauce for stir fry! Or use it for chicken, like marinating chicken breasts in it for ultra-flavorful chicken cutlets. Just remember to chop up some basil for garnish for that true Drunken Noodle flavor!

    Spicy Thai Sauce Ingredients

    • Garlic
    • Ginger paste
    • Sesame oil
    • Soy sauce
    • Oyster sauce
    • Red pepper flakes
    • Basil (optional)

    How to Make Drunken Noodle Sauce

    1. Combine all ingredients except for the basil (if using) in a bowl.

    3. For best results, add to the dish while it's still cooking to let the ginger and garlic heat up!

    Drunken Noodle Sauce Recipe Tips

    • Gluten-Free Drunken Noodles: To make this into a gluten free Thai sauce recipe, swap out the soy sauce (which contains trace amounts of wheat) for tamari, and check the labels on any oyster sauce before you buy it- some brands contain soy sauce or wheat for thickening!
    • If you don't have any ginger paste, fresh ginger grated finely on a zester will work too. In a pinch, dried ginger will work too, just with a lot less kick.
    • For the true Thai experience, look for Thai basil! It has a distinct flavor that differs from the classic sweet basil, but might be hard to find outside or Asian markets.
    • The spice level of this dish varies depending on how much red pepper flake you want to add! Make it to your tastes, and enjoy!
