Chocolate Ganache for Cake
Having experience working with ganache frosting for cake, I'll let you in on a little trick for what gives the ganache its shiny finish on store-bought ganache cakes: corn syrup!
Use about 2 Tablespoons of corn syrup per 1 cup heavy cream to give the ganache a shiny finish. In the case of this recipe, use ½ Tablespoon for ¼ cup heavy cream.
You can use light or dark corn syrup - both will work. This extra ingredient adds a beautiful finish to the ganache, so if you want that extra "wow" factor, give it a try! It also makes the ganache slightly easier to pour, so it's perfect for pouring over a cake or cheesecake.
How to Make Chocolate Ganache
- Add heavy cream to a microwave-safe glass measuring cup and semi-sweet chocolate chips to a heat-proof bowl. Microwave the heavy cream for 45 seconds, until it just begins bubbling. (If using, mix and heat the corn syrup with the heavy cream.)
- Slowly and carefully pour the hot heavy cream over the chocolate chips.
- Stir the chocolate until it melts and is smooth. If they don't melt completely after stirring, add the bowl back to the microwave for 10-15 seconds and stir again.
- Add a pinch of sea salt and stir.
- Use for your favorite desserts!
Chocolate Ganache Recipe Tips
- You can microwave or heat the heavy cream in a saucepan, whichever you prefer. If you're using corn syrup with it, mix them together and heat both at the same time.
- You can use dark, white, or milk chocolate chips - whichever you prefer. They all work the same way for this recipe.
- You can make chocolate ganache without cream by substituting the cream with milk and butter instead. Follow the instructions below to replace cream with milk.
Chocolate Ganache without Cream
- For ¼ cup milk, you will also need 2 Tablespoons butter. Gently heat the milk on the stove in a saucepan with butter over medium heat.
- Turn the heat up slightly and allow the milk mixture to bubble.
- Once it starts to bubble, remove it from the heat and pour it over the chocolate.
- Mix until smooth and creamy.
Dark Chocolate Ganache
Making dark chocolate ganache is as easy as swapping out the semi-sweet chocolate chips for dark chocolate. If you prefer the flavor of dark chocolate, this is a great way to tailor your chocolate dip to your tastes.
White Chocolate Ganache
You can even make a white chocolate ganache recipe by swapping out the semi-sweet chocolate chips for white chocolate chips. You may want to use more white chocolate chips for a stronger white chocolate flavor, as it has a more mild flavor than dark or semi-sweet chocolate. Follow all the same steps - nothing about the rest of the recipe changes!
Chocolate Ganache FAQs
For classic chocolate ganache, use semi-sweet chocolate chips. If you want dark chocolate ganache, replace the semi-sweet chips with dark chocolate, and if you want white chocolate ganache, replace them with white chocolate chips. For white chocolate chips, you may want to mix in more chips for a bolder white chocolate flavor.
Ganache will harden if left at room temperature or in the refrigerator. As ganache contains heavy cream, it is best to let it harden in the refrigerator. If you heat it up in 30 second intervals in the microwave, stirring between each interval, it will reach a smooth consistency again.
