    The Best Spicy Chicken Marinade

    When I get busy on a weekday night and have no idea what to serve, my thoughts always drift to the classic: takeout, of course! And why bother buying it when you can make it at home, and it'll be better than any takeout you've ever had?

    That's where this amazing spicy chicken marinade comes in! Every part of this recipe is perfect for the best Chinese-inspired stir-fry chicken ever. Garlic ginger paste tenderizes the chicken as it marinades, and the soy sauce and chili powder add savory heat.

    Sick of the mess of breading chicken to fry? This recipe is the answer! Egg and corn starch pre-mixed into the marinade make the crispy-crunchy crust for you as it cooks!

    Spicy Asian Chicken Marinade Ingredients

    • Egg
    • Garlic ginger paste
    • Soy sauce
    • Chili powder
    • Cornstarch

    If you don't have garlic ginger paste, you can make your own by mixing fresh garlic with ginger root and a bit of oil.

    How to Make Spicy Marinade for Chicken

    1. In a small bowl, combine the egg, garlic ginger paste, soy sauce, chili powder and cornstarch.
    2. Mix the marinade well until no clumps of cornstarch remain, and the egg is evenly mixed.
    3. Immerse chicken in the marinade, stir until evenly coated, then pour both chicken and marinade into a bag and place in the refrigerator.
    4. Let rest at least one hour before use. I recommend shallow-frying this amazing chicken!

    Chicken Marinade Recipe Tips

    • Don't worry if you don't have garlic ginger paste already! If you have garlic bulbs and a frozen or fresh ginger root, you have everything you need. Finely grate ginger and garlic (1 part ginger to 2 parts garlic), mix them with a little oil, and you've got fresh, flavorful garlic ginger paste ready to go!
    • If you've having trouble getting the cornstarch not to clump, mix it with a tiny bit of water first before adding it in. Not too much, or it'll make the marinade too thin.
    • While this marinade is made for chicken, it's delicious with other proteins! Try it with tofu, thin cut pork or beef, or even shrimp or prawns!

    Spicy Chicken Marinade FAQs

    How long should I marinate chicken?

    Chicken marinating times depend on how thick or thin the pieces of chicken are. For whole pieces such as breasts, legs and thighs, marinate for 5-6 hours. For thin slices, marinate 1 hour.

    Can I use leftover marinade?

    Marinade can be used as sauce for the finished dish, but you need to make sure to cook it thoroughly before using it! Used marinade has been in contact with raw chicken and should be simmered for 15 minutes to ensure it's safe to eat.
