I'm about to introduce you to a trick that will change the way you cook meat forever. It's called compound butter, and with as few as five basic pantry ingredients, you'll know what your prime rib roasts and turkeys have been missing!
I never knew just how magical herb butter is until I tried it. Dry rubs are incredible, but butter rubs are second to none when it comes to adding moisture to meat! I love using butter for turkey, or as a to-die-for prime rib butter rub.
And of course, you can't forget compound butter for steak! Slather this butter on steak before cooking it to infuse the meat with incredible herb flavors. Plus, the fats will help form a delicious crust on the steak and keep it extra juicy.
You can even use this as a butter rub for turkey, roast chicken, or pork.
Compound Butter Ingredients
- Butter
- Garlic powder
- Rosemary
- Thyme
- Pepper
How to Make Herb Butter
- Set out the butter to soften.
- While it's softening, chop the herbs finely, if using fresh.
- Once the butter is nicely softened, add in the garlic powder, herbs, and pepper.
- Mix with a fork or spatula until completely smooth and well incorporated.
- Spread liberally on meat, vegetables, or even a slice of bread, and serve!
Compound Butter Recipe Tips
- You can use fresh or dried herbs for compound butter- the moisture of the butter will soften the dried herbs nicely! I prefer fresh for the oils stored in the leaves. If using dry, use less as they have a very strong flavor. See recipe card notes for exact amounts.
- Salted or unsalted butter will work out just fine for this recipe, but if using unsalted, add a pinch of salt to the mix- it makes the rub more flavorful.
- Make more than you need, roll the leftover butter into a log in plastic wrap, and store it in the fridge! You can use this delicious flavored butter later, too! It will last up to 1 month in the refrigerator and 3 months if you freeze it.
