Pea Puree FAQs
Pea sauce is made with simple ingredients you probably already have most of in your kitchen: pureed peas, asparagus, parmesan, salt, pepper, lemon zest, and butter!
If using frozen peas for this pea sauce, I recommend thawing your peas ahead of time - no need to cook them.
Green Pea Sauce Ingredients
- Asparagus
- Green peas
- Parmesan
- Salt
- Black pepper
- Lemon zest
- Butter
How to Make Pea Sauce
- Cut and discard the woody ends from the asparagus. Cleanly cut the tips away from the stalks, and set them aside to use later. Bring a pot of water to boil and add the asparagus stalks and green peas. Cook for 10 minutes, or until the asparagus softens to the point of mashing easily without effort.
- Strain peas and asparagus and add to a food processor. Blend until they are smooth and creamy, then remove the mixture and run it through a sieve to pick out any fibrous parts. This is optional, but will give you a creamier sauce.
- Heat a pan on the stove over medium-high and add butter. Melt, then add asparagus tips and cook until they are golden and soft. Season with salt and pepper to taste, then set aside.
- Pour pea cream and asparagus tips over prepared pasta or meal of choice, and mix together. Top with parmesan and lemon zest. Enjoy!
What Pasta to Use for Pasta with Pea Sauce
You can use any pasta shape that is your favorite! I love using penne noodles because all the sauce gathers in all the nooks and crannies of the shell.
Shell-like pasta is best for sauces like this pea sauce, but pea pasta sauce is great mixed with fettuccine noodles, rigatoni, rotini, and any other small pastas, too!
Pea Sauce Tips
- Thaw peas before using them: If you use frozen peas, let them thaw before or the sauce will become too watery.
- Use a mesh sieve to create an extremely smooth sauce: Once blended, pass the pea sauce through the sieve for a creamier texture.
