Pea Sauce  for Pasta

It's one tasty and easy way to eat your greens, or even to hide them from your kids!

 Ingredients

– asparagus – green peas – vegan parmesan  – salt & pepper  – lemon zest  – vegan butter

Step 1

Prepare the asparagus by cutting off and discarding the woody ends. Neatly cut the tips away from the stalks and save them for later.

Step 2

Boil asparagus and peas until soft. Add to a food processor and blend until smooth. 

Step 3

Melt butter and add asparagus tips and cook until golden. Season with salt and pepper. 

Step 4

Pour pea cream and asparagus tips over the pasta and mix together. Top with parmesan and lemon zest.
