If making your own coleslaw mix, shred the vegetables. Then add the shredded mix, mayonnaise, apple cider vinegar, salt, and pepper into a large mixing bowl.
½ cup Mayonnaise, 1 Tablespoon Apple cider vinegar, 1 Tablespoon Sugar, ¼ teaspoon Salt, ¼ teaspoon Pepper, 8 oz Coleslaw mix
Toss well until the coleslaw is evenly mixed, tasting to adjust the salt and pepper as desired.
Cover, and refrigerate until ready to use. Coleslaw gets even better as it rests!
Notes
Feel free to dress up your coleslaw any way you'd like! Add more mayo to make it extra creamy, your own favorite flavor of vinegar, or even a quick shake of cayenne pepper for just a little bit of bite.
Bagged, pre-shredded coleslaw mix makes making homemade coleslaw a breeze! But if you'd prefer to make your own mix, it's super easy too- and you can mix and match your favorite vegetables to add in.
When using freshly shredded vegetables, make sure to wash the carrot shreds before using them in coleslaw. If you don't, the juices will turn the coleslaw bright orange and add a distinct sweet carrot flavor.
Don't be afraid to get creative with the cabbage! Any cabbage will do, be it green, purple, or something a little different like bok choy.
Make extra, and let it sit in the fridge. You'll be amazed at how creamy and delicious coleslaw gets as it rests!
