Ingredients
  

  • ½ Tablespoon Walnut oil or any other light oil
  • 1 small Red onion
  • 2 teaspoons Garlic ginger paste
  • 1 Red chili pepper
  • 1 Green chili pepper
  • 3 Tablespoons Ketchup
  • 1 teaspoon Honey
  • 1 Tablespoon Sweet chili sauce
  • 1 Tablespoon Soy sauce
  • Handful Cashews chopped
  • 3 Green onions sliced

Instructions
 

  • Dice the red onion and both chilis, removing the seeds if desired (keeping them in makes the sauce spicier!).
    1 small Red onion, 1 Green chili pepper, 1 Red chili pepper
  • Add diced onions, chilis, garlic ginger paste and oil to a pan, then stir-fry gently until the onions are soft.
    ½ Tablespoon Walnut oil, 2 teaspoons Garlic ginger paste
  • Add in the ketchup, honey, sweet chili sauce and soy sauce, then mix well until combined.
    3 Tablespoons Ketchup, 1 teaspoon Honey, 1 Tablespoon Sweet chili sauce, 1 Tablespoon Soy sauce
  • Let the sauce come to a simmer, then top with cashew chips and sliced green onions, and serve! If you're bottling this sauce to save, add the cashews and green onions while serving.

Notes

  • If you don't have garlic chili paste on hand, don't worry! Fresh garlic, ginger root and a little oil are all you need to make your own. Just add 1 part ginger to 2 parts garlic and a splash of oil into the blender and you'll have fresh-made garlic ginger paste that's even better than bottled!
  • Bottled sweet chili sauce can easily be swapped out for hot sauce and a little more honey. Add a half tablespoon of each.
  • If you're making this recipe soy-free with coconut aminos, scale back the honey slightly! Coconut aminos are naturally quite sweet, unlike how savory soy sauce is, so it doesn't need as much sweetening.
