– Meat drippings – Butter – Salt and pepper – Juice from a lemon – Leeks – Garlic – Flour – Chicken stock – Milk – Ground Mustard – Sour Cream – Fresh tarragon leaves
If using meat drippings, remove the meat and lower the heat to medium. If not, melt butter in a pan.
Add leeks to the skillet. Make sure to move the leeks around in order for them not to burn.
While the leeks are cooking add garlic and stir. Then, stir in flour and then gradually add stock and milk.
When the broth starts to simmer, turn the heat to low for 15 minutes. You can also add protein at this point if you desire.
Once the sauce has thickened, add ground mustard and of sour cream into the chicken and leek sauce.
Squeeze the juice of half a lemon into the sauce and season with salt and pepper. Finish by stirring in some fresh tarragon leaves.
