peri peri sauce
INGREDIENTS
– 2 tablespoons vegetable oil – 4 cloves garlic crushed – ½ medium red onion diced – 2 tablespoons sweet paprika – 2 large fire roasted peppers – 6 Thai red chilis seeds removed, finely chopped – ¼ cup sherry vinegar – 3 tablespoons lemon juice – Zest of 1 lemon – 2 teaspoons brown sugar – 4 teaspoons dried oregano – 1½ teaspoons salt – 1 teaspoon black pepper
SAUTE
Heat the oil, then saute the onions, garlic and paprika about 5 minutes until softened.

BLEND
Add all ingredients to a blender, including the onion mixture, and blend until nearly smooth.
