If you don't have Oyster sauce or can't have shellfish, fish sauce is a pretty good substitute. If fish is off the menu too, a little Hoisin sauce will do the trick! It has a slightly stronger flavor, so prepare to use a little less.
If you're cooking gluten-free, make sure to check your bottle of Oyster sauce to make sure it doesn't already include soy sauce, which typically secretly contains small amounts of wheat. As for the soy sauce, swap it out with coconut aminos or tamari! Note that coconut aminos are very sweet, so you might not need to add sugar.
Mayonnaise has a tendency to clump when mixed with thinner liquids, so make sure to whisk the sauce well to make sure it's nice and smooth.
