Instant Pot Instructions
Set Instant Pot to saute mode and add ground breakfast sausage. Cook until browned, about 5 minutes.
1 pound sage breakfast sausage
Add butter to the sausage and mix it in until it melts completely.
3 Tablespoons butter
Stir in all-purpose flour until fully mixed through and you can't see the flour anymore.
⅓ cup all-purpose flour
Slowly pour in milk, stirring frequently. Do this slowly so the milk does not curdle.
3 cups milk
Add maple syrup, garlic powder, and a pinch of pepper. Mix, then cook another 2 minutes before adding in steak seasoning and salt and pepper to taste. If desired, add red pepper flakes for spice.

Stove Instructions
Add sausage to a large skillet over high heat. Break up and brown the sausage.

Gradually add 1½ cups milk and stir well. Let it cook a minute or two, then slowly add the next 1½ cups milk. Let it cook another minute or so before adding maple syrup, Chicago steak seasoning, garlic powder, and salt and pepper to taste.

Allow it to bubble and thicken until it reduces into a thick gravy. When you can stir it in the pan and it sticks to the back of the spoon and seems very thick, it's ready.

Notes
Always slowly pour milk to avoid it curdling when it hits the hot heat of the pan.
You can use any breakfast sausage you like, but I love the flavor sage sausage adds to this dish!
