Ingredients
  

  • 1 lemon
  • 8 Tablespoons butter divided into 5 tablespoons and 3 tablespoons
  • 1 Tablespoon garlic minced
  • 1 cup white wine or chicken broth
  • ½ cup heavy cream or half & half
  • salt and pepper to taste

Instructions
 

  • In a skillet over medium heat, melt 5 Tablespoons of butter and add minced garlic.

  • Cook the garlic for 2-3 minutes, then squeeze in lemon juice.

  • Continue cooking for 2-3 minutes, then add the white wine and stir.

  • Simmer for 2-3 minutes, then add in remaining butter and season with salt and pepper.

  • Slowly stir in the heavy cream, and mix well. Serve, and enjoy!

Notes

  • Choose a sauce based on the sides you'll be serving! Roasted vegetables and pasta are incredible with cream sauce, while you might prefer to serve chicken and fries with a dipping sauce.
  • These sauces are perfect for chicken, but it's never a bad idea to make extra to serve with other proteins in the following days!
  • Most sauces are perfect for making ahead, but avoid this with Bearnaise or other egg-heavy sauces. They won't reheat well, and are best served fresh!
  • For butter-based pan sauces, good butter matters! A quality butter will make a big difference, so it's worth picking up something nice.
