Remove the pit and skin from the avocado, then place all of the ingredients excluding half of the Parmesan in a food processor or blender, and blend until smooth. Thin it out with a little extra water if needed.
1 large Avocado, 1 cup Spinach, 2 cloves Garlic, ¼ cup Lime juice, 2 Tablespoons Olive oil, ½ cup Parmesan, ½ teaspoon Pepper, ½ teaspoon Salt
Pour the sauce into a large pan to heat up over low heat, then add in cooked pasta of choice, and toss well to combine. Add in the rest of the Parmesan, and let it melt.

Serve with any desired toppings, and enjoy!
Notes
Make sure to use fresh, ripe avocados for pasta sauce. They make up the bulk of the texture and flavor, and you won't want to miss out on how creamy a ripe avocado can be!
Bottled lime juice will work in a pinch, but fresh lime juice makes a world of difference. Fresh juice will have a certain tartness and bite that bottled loses, adding depth to the sauce.
This pasta sauce is a beautiful vibrant green when fresh, but be warned, it can start browning if left out. Be sure to serve it right away to keep a lovely color and texture!
