Turkey drippings will already have seasonings from the turkey, and stock is already salted, unless you bought low-sodium stock. So, you don't want to add salt or pepper until after you finish cooking the gravy and can adjust it to taste.
Chicken stock or vegetable stock work as well rather than turkey stock.
To get rid of any stubborn clumps, use the back of a spoon to flatten them out and mix them in. You want to dissolve the flour completely before adding the stock.
