Romesco Sauce

Servings: 1 cup


red bell pepper  plum tomatoes garlic yellow onion extra virgin olive oil almonds  baguette  salt  sherry vinegar  sweet paprika pimentón  ground red chili


Preheat oven to 350˚F. Brush the vegetables with olive oil and place in the oven. Roast until soft and beginning to char, 25-30 minutes.


Heat a pan and add oil. Add almonds and cook until golden. Remove and add bread to the pan and toast until golden on each side. 


Place all prepared vegetables in a food processor. Add almonds, bread, salt, vinegar, paprika, ground red chili, and oil. Puree until smooth and enjoy!
